Instructions
step by stepIn a large mixing bowl, combine 2 cups of pre-cooked white cornmeal with 1 teaspoon salt.
Gradually add 2.5 cups warm water, mixing with your hands until a soft, pliable dough forms. The dough should not be sticky or crumbly.
Let the dough rest for 5 minutes to allow the cornmeal to fully hydrate.
Divide the dough into 8 equal portions and roll each into a ball.
Flatten each ball into a disc about 1/2 inch thick and 4 inches in diameter.
Place a generous tablespoon of shredded mozzarella cheese in the center of each disc.
Fold the edges over the cheese and reshape into a ball, then gently flatten again to about 3/4 inch thickness, sealing the cheese inside.
Heat a large skillet or griddle over medium heat and brush lightly with butter.
Cook the arepas for 5-6 minutes on each side until golden brown and crispy, with a slight char in spots.
The cheese inside should be fully melted. Press gently with a spatula while cooking to ensure even browning.
Remove from heat and let rest for 2 minutes before serving warm.
