Recipe Story

origins & traditions

Arepas de Queso are beloved Colombian corn cakes that combine the earthy flavor of white cornmeal with rich, melty cheese. These traditional treats are a staple throughout Colombia, enjoyed at any time of day. The dough is simple yet versatile, made from pre-cooked cornmeal mixed with water, salt, and stuffed with mozzarella or queso fresco. When cooked on a griddle or skillet, they develop a beautiful golden crust while remaining tender inside. The cheese filling creates irresistible stretchy strands when you break them open. Perfect for gatherings, game days, or casual dining, these arepas embody the warmth and comfort of Colombian home cooking. They are naturally gluten-free and can be customized with different cheese varieties to suit your taste preferences.

Instructions

step by step
0/11 done
  1. In a large mixing bowl, combine 2 cups of pre-cooked white cornmeal with 1 teaspoon salt.

  2. Gradually add 2.5 cups warm water, mixing with your hands until a soft, pliable dough forms. The dough should not be sticky or crumbly.

  3. Let the dough rest for 5 minutes to allow the cornmeal to fully hydrate.

  4. Divide the dough into 8 equal portions and roll each into a ball.

  5. Flatten each ball into a disc about 1/2 inch thick and 4 inches in diameter.

  6. Place a generous tablespoon of shredded mozzarella cheese in the center of each disc.

  7. Fold the edges over the cheese and reshape into a ball, then gently flatten again to about 3/4 inch thickness, sealing the cheese inside.

  8. Heat a large skillet or griddle over medium heat and brush lightly with butter.

  9. Cook the arepas for 5-6 minutes on each side until golden brown and crispy, with a slight char in spots.

  10. The cheese inside should be fully melted. Press gently with a spatula while cooking to ensure even browning.

  11. Remove from heat and let rest for 2 minutes before serving warm.

Chef Tips

expert advice
For the most authentic flavor, use pre-cooked white cornmeal (masarepa or harina de maiz precocida), not regular cornmeal or masa harina.
If the dough cracks while shaping, it is too dry - add a tablespoon of water at a time.
For extra richness, add a tablespoon of butter to the dough.
You can substitute mozzarella with queso fresco, feta, or cheddar cheese.
For a crispier exterior, brush the arepas with melted butter before cooking.
These freeze beautifully - cook them fully, let cool, and freeze in a single layer.
Reheat directly from frozen in a skillet or oven.
Serve with Colombian hot chocolate, coffee, or aji sauce for dipping.
