Take about 1 teaspoon of goat cheese and stuff it into the cavity of each date, pressing gently to secure the filling inside.
Cut each bacon slice in half crosswise. Wrap one half slice of bacon around each stuffed date, starting at one end and wrapping in a spiral pattern. Secure the bacon with a toothpick inserted through the center.
Arrange the bacon-wrapped dates on the prepared baking sheet, leaving space between each one. Make sure the bacon seam is facing down to help it stay in place during cooking.
Place the baking sheet in the preheated oven and bake for 18-20 minutes, turning the dates halfway through cooking to ensure even browning. The bacon should be crispy and golden brown.
