step by stepPrepare the quick pickle: In a small bowl, combine thinly sliced carrots and cucumber with vinegar, a pinch of salt, and a teaspoon of honey. Set aside to pickle while you prepare the rest.
Slice the baguette lengthwise, leaving one side attached like a hinge. Lightly toast in a skillet or toaster oven until golden and crispy, about 2-3 minutes.
Heat vegetable oil in a non-stick skillet over medium-high heat. Crack the eggs into the pan and fry until the whites are set and edges are crispy, about 2-3 minutes. Season with black pepper and a splash of soy sauce.
Spread mayonnaise on both sides of the toasted baguette. Layer the bottom with fresh cilantro leaves.
Place the fried eggs on top of the cilantro. Add the pickled vegetables, allowing excess liquid to drain off first.
Add fresh cucumber slices and a few drops of hot sauce if desired. Close the sandwich and press gently.
Cut in half diagonally and serve immediately while the baguette is still warm and crispy.
