Recipe Story
origins & traditionsThese traditional Liège waffles are the quintessential Belgian street snack, beloved throughout Belgium and beyond. Unlike Brussels waffles, Liège gaufres feature a dense, brioche-like dough studded with chunks of pearl sugar that caramelize during cooking, creating irresistible pockets of sweetness and crunch. The yeast-based dough is enriched with butter and vanilla, resulting in a tender interior with crispy, golden edges. Originating in the Prince-Bishopric of Liège in the 18th century, these waffles were created when a prince asked his cook to make something with vanilla and sugar. Today, they remain one of Belgium's most popular portable treats, sold from street vendors and enjoyed warm at any time. The key to authentic Liège waffles is using Belgian pearl sugar, which doesn't melt completely during cooking, maintaining its characteristic crunch.
Instructions
step by stepIn a small bowl, warm the milk to 110°F and dissolve the yeast with 1 teaspoon of sugar. Let stand for 5-10 minutes until foamy.
In a large mixing bowl, combine flour and salt. Create a well in the center.
Add the yeast mixture, eggs, and vanilla extract to the well. Mix gently to combine.
Gradually incorporate the softened butter, mixing until a soft, sticky dough forms.
Knead the dough for 5-7 minutes until smooth and elastic. Cover and let rise in a warm place for 1.5-2 hours until doubled in size.
Punch down the dough and divide into 8 equal portions (about 100g each).
Gently fold the pearl sugar into each portion, being careful not to crush the sugar crystals.
Shape each portion into a smooth ball and let rest for 10 minutes.
Preheat your waffle iron to medium-high heat.
Place one dough ball in the center of the waffle iron and close the lid gently. Cook for 3-4 minutes until deep golden brown and caramelized.
Carefully remove the waffle and place on a cooling rack. Repeat with remaining dough balls.
Serve warm for the best texture and flavor.
