  1. Boil the yellow potatoes in salted water until fork-tender, about 20-25 minutes. Drain and let cool slightly.

  2. Peel the warm potatoes and mash them thoroughly until completely smooth with no lumps.

  3. Add olive oil, lime juice, salt, and a pinch of turmeric to the mashed potatoes. Mix until creamy and well combined. Set aside to cool completely.

  4. Drain the canned tuna thoroughly and place in a mixing bowl. Flake with a fork.

  5. Add mayonnaise to the tuna and mix well. Season with salt and black pepper to taste.

  6. Dice the bell peppers and red onion finely. Add to the tuna mixture and combine.

  7. Slice the avocados and drizzle with lime juice to prevent browning.

  8. Line a rectangular mold or loaf pan with plastic wrap, leaving overhang on all sides.

  9. Spread half of the potato mixture evenly in the bottom of the mold, pressing down firmly to create a compact layer.

  10. Arrange half of the avocado slices over the potato layer.

  11. Spread the tuna mixture evenly over the avocado layer.

  12. Add the remaining avocado slices on top of the tuna.

  13. Cover with the remaining potato mixture, spreading evenly and pressing down gently.

  14. Fold the plastic wrap over the top and refrigerate for at least 2 hours to firm up.

  15. When ready to serve, unwrap and invert onto a serving platter.

  16. Garnish with hard-boiled egg slices, black olives, lettuce leaves, and fresh parsley.

  17. Slice with a sharp knife into portions and serve cold.
