Clean the mushrooms with a damp paper towel, removing any dirt. Carefully remove the stems and set the caps aside. Finely chop the stems.
Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the chopped onions and cook for 3-4 minutes until softened.
Add the minced garlic and chopped mushroom stems to the skillet. Cook for another 3-4 minutes until the moisture has evaporated.
Remove from heat and transfer the mixture to a mixing bowl. Add the breadcrumbs, parmesan cheese, parsley, thyme, salt, and black pepper. Mix well to combine.
Drizzle the remaining olive oil over the mushroom caps and season lightly with salt.
Stuff each mushroom cap generously with the breadcrumb mixture, pressing gently to pack it in.
Arrange the stuffed mushrooms on the prepared sheet pan, stuffing side up.
Roast in the preheated oven for 20-25 minutes, until the mushrooms are tender and the tops are golden brown.
