step by stepPreheat your oven to 425°F (220°C). Line two baking sheets with parchment paper or silicone baking mats.
In a medium saucepan, combine 1 cup water, 6 tablespoons butter, and 1/2 teaspoon salt. Bring to a rolling boil over medium-high heat, ensuring the butter is completely melted.
Remove from heat and immediately add 1 cup all-purpose flour all at once. Stir vigorously with a wooden spoon until the mixture forms a smooth ball and pulls away from the sides of the pan.
Return the pan to low heat and cook for 1-2 minutes, stirring constantly, to dry out the dough slightly. You should see a thin film forming on the bottom of the pan.
Transfer the dough to a mixing bowl and let cool for 5 minutes. This prevents the eggs from cooking when added.
Add 4 eggs one at a time, beating well after each addition until fully incorporated. The dough should be smooth, glossy, and fall slowly from the spoon in a thick ribbon.
Stir in 1 cup shredded Gruyère cheese, 1/4 teaspoon black pepper, and a pinch of nutmeg until evenly distributed.
Using two spoons or a piping bag, drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Sprinkle the tops with the remaining 2 tablespoons of Gruyère cheese.
Bake for 10 minutes at 425°F, then reduce heat to 375°F (190°C) without opening the oven door. Continue baking for 15-18 minutes until golden brown and puffed.
Turn off the oven, crack the door slightly, and let the gougères sit for 5 minutes to dry out and prevent deflating.
Remove from oven and serve warm or at room temperature.
