While rice is cooking, prepare the sauce by mixing 2 tablespoons soy sauce, 1 teaspoon sesame oil, and a pinch of black pepper in a small bowl. Set aside.
Heat 1 tablespoon vegetable oil in a non-stick skillet over medium heat until shimmering but not smoking.
Crack 2 eggs into the skillet, being careful not to break the yolks. Season lightly with salt and black pepper.
Cook the eggs for 3-4 minutes until the whites are completely set and the edges are slightly crispy, but the yolks remain runny. Cover the pan for the last minute if needed to help set the whites.
