In a large saucepan over medium heat, combine 3 cups of milk, 1 cup of water, grated ginger, lime zest, cinnamon stick, and a pinch of salt.
Bring the mixture to a gentle simmer, stirring occasionally to prevent scorching on the bottom.
Once simmering, slowly pour in the cornmeal mixture while whisking constantly to prevent lumps from forming.
Reduce heat to low and continue to stir frequently as the porridge thickens, about 15-20 minutes.
