step by stepPrepare the filling: Blanch spinach in boiling water for 30 seconds, then immediately transfer to ice water. Drain thoroughly and squeeze out all excess moisture. Chop finely.
Heat sesame oil in a skillet over medium-high heat. Add minced garlic and ginger, stirring for 30 seconds until fragrant.
Add finely chopped mushrooms to the skillet and cook for 5-7 minutes until all moisture has evaporated and mushrooms are golden.
Add the chopped spinach to the mushroom mixture. Season with soy sauce, salt, and black pepper. Cook for 2 minutes, stirring constantly. Remove from heat and let cool completely.
Prepare your work station: Place a small bowl of water nearby for sealing dumplings. Lay out dumpling wrappers and keep them covered with a damp cloth to prevent drying.
To assemble: Place one wrapper on your palm. Add 1 tablespoon of filling to the center. Dip your finger in water and moisten the edges of the wrapper.
Fold the wrapper in half to create a half-moon shape. Starting from one end, create pleats by folding small sections of the wrapper edge, pressing firmly to seal. Continue pleating until you reach the other end.
Place completed dumplings on a parchment-lined steamer basket, leaving space between each dumpling.
Bring water to a boil in your steamer pot. Place the steamer basket over the boiling water, ensuring the water does not touch the dumplings.
Cover and steam for 12-15 minutes until the wrappers become translucent and filling is heated through.
Carefully remove dumplings from steamer and serve immediately with dipping sauce.
