step by stepPreheat oven to 350°F and grease a 9x13 inch baking dish with butter or oil.
Peel the very ripe plantains and grate them using a box grater into a large mixing bowl.
Add the grated sweet potato to the bowl with the plantains and mix to combine.
In a separate bowl, whisk together flour, cinnamon, nutmeg, and salt.
Add the brown sugar, molasses, melted butter, vanilla extract, and milk to the plantain mixture and stir well.
Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.
Pour the batter into the prepared baking dish and spread evenly.
Bake for 45-50 minutes until the top is golden brown and a toothpick inserted comes out mostly clean with a few moist crumbs.
Allow to cool in the pan for 15 minutes, then cut into 12 square portions.
