step by stepIn a double boiler or heatproof bowl set over simmering water, melt the dark chocolate with butter, stirring until smooth. Remove from heat and let cool for 5 minutes.
In a separate bowl, whisk egg yolks with half of the sugar until pale and thick, about 3-4 minutes.
Slowly pour the cooled chocolate into the egg mixture, whisking constantly. Add the brewed espresso and vanilla extract. Set aside.
In a large bowl, whip the heavy cream with the remaining sugar until soft peaks form. Do not overwhip.
Gently fold one-third of the whipped cream into the chocolate mixture to lighten it.
Carefully fold the chocolate mixture back into the remaining whipped cream using a rubber spatula, being careful not to deflate the mixture.
Line a loaf pan with plastic wrap, leaving overhang on all sides.
Pour the semifreddo mixture into the prepared pan and smooth the top.
Cover with the plastic wrap overhang and freeze for at least 6 hours or overnight until firm.
To serve, unwrap and invert onto a serving platter. Remove plastic wrap, slice with a warm knife, and serve immediately.
