Transfer minced shrimp to a mixing bowl. Add minced garlic, grated ginger, finely chopped green onions, soy sauce, sesame oil, egg white, and a pinch of black pepper. Mix thoroughly until well combined and sticky.
Remove crusts from bread slices and cut each slice diagonally twice to create 4 triangles per slice.
Spread approximately 1 tablespoon of shrimp mixture evenly onto each bread triangle, mounding slightly in the center.
Pour sesame seeds onto a flat plate. Press each shrimp-topped triangle face-down into the sesame seeds, ensuring even coverage.
Heat vegetable oil in a wok or deep skillet to 350°F (175°C). The oil should be about 2 inches deep.
Carefully place triangles shrimp-side down into the hot oil, working in batches of 4-5 pieces to avoid overcrowding.
Fry for 2-3 minutes until golden brown, then flip and fry the bread side for another 1-2 minutes.
Remove with a slotted spoon and drain on paper towels.
Serve immediately while hot and crispy.
