Recipe Story
origins & traditionsSfenj are iconic Moroccan fried doughnuts that have been enjoyed for generations across North Africa. These delightful treats feature a crispy golden exterior that gives way to a soft, airy interior. Made from a simple yeasted dough that is stretched into rings and deep-fried to perfection, sfenj are typically served warm and drizzled with honey or dusted with granulated sugar. The dough requires minimal ingredients but benefits from a proper rise time to develop its characteristic chewy texture and subtle flavor. Street vendors across Morocco prepare these fresh throughout the day, creating an irresistible aroma that draws crowds. Whether enjoyed with morning mint tea or as an afternoon snack, sfenj represent the perfect balance of sweet indulgence and traditional craftsmanship. The key to authentic sfenj lies in the dough consistency and frying temperature, ensuring each doughnut puffs up beautifully while maintaining its structure.
Instructions
step by stepIn a large mixing bowl, combine the flour, salt, and sugar. Mix well to distribute ingredients evenly.
In a separate bowl, dissolve the yeast in warm water and let it sit for 5 minutes until frothy.
Make a well in the center of the flour mixture and pour in the yeast mixture. Add the remaining water gradually.
Mix with your hands or a wooden spoon until a very sticky, elastic dough forms. The dough should be wet and difficult to handle.
Cover the bowl with a damp cloth and let the dough rise in a warm place for 1-2 hours until doubled in size.
Heat vegetable oil in a deep pot or dutch oven to 350°F (175°C). The oil should be at least 3 inches deep.
Prepare a bowl of water nearby. Wet your hands thoroughly to prevent sticking.
Take a golf ball-sized piece of dough and flatten it in your palm. Use your finger to poke a hole in the center, stretching it gently to form a ring shape.
Carefully slide the dough ring into the hot oil. Fry 2-3 sfenj at a time, being careful not to overcrowd.
Fry for 2-3 minutes on each side until golden brown, flipping once with a slotted spoon.
Remove from oil and drain on paper towels.
While still warm, drizzle with honey or dust with sugar. Serve immediately for best texture.
