step by stepPrepare the plum dipping sauce by combining 4 pitted plums, 3 tablespoons rice vinegar, 2 tablespoons honey, 1 teaspoon grated ginger, and a pinch of salt in a saucepan. Simmer over medium heat for 12-15 minutes until plums break down and sauce thickens. Strain through a fine mesh sieve, pressing solids to extract maximum flavor. Let cool completely.
Cook rice noodles according to package directions, drain, rinse with cold water, and toss with 1 teaspoon sesame oil to prevent sticking. Set aside.
Julienne carrots and cucumber into thin matchsticks about 3 inches long. Pick cilantro and mint leaves from stems. Slice smoked duck breast into thin strips.
Prepare a large shallow dish with warm water. Fill a clean work surface with damp towels.
Dip one rice paper wrapper into warm water for 3-4 seconds until just pliable, then lay flat on damp towel. Do not oversoak or wrapper will tear.
On the lower third of the wrapper, arrange a small portion of noodles, 2-3 strips of duck, 3-4 pieces each of carrot and cucumber, and several herb leaves. Leave 1 inch border on sides.
Fold bottom edge over filling, fold in sides, then roll tightly away from you to form a compact cylinder. Place seam-side down on serving platter.
Repeat with remaining wrappers and filling. Cover finished rolls with damp towel to prevent drying.
Slice each roll in half on the diagonal and arrange on platter with plum dipping sauce in center bowl.
