step by stepPeel sweet potatoes and cut into 3/4-inch cubes. Dice bell peppers and onion into similar-sized pieces. Mince garlic and set aside.
Heat olive oil in a large skillet over medium-high heat. Add sweet potato cubes in a single layer and cook without stirring for 4-5 minutes until golden brown on the bottom.
Flip sweet potatoes and add diced onions and bell peppers. Season with salt, black pepper, cayenne, and thyme. Cook for 8-10 minutes, stirring occasionally, until sweet potatoes are tender and vegetables are softened.
Add minced garlic and cook for 1 minute until fragrant.
While vegetables cook, prepare guava glaze: In a small bowl, mash fresh guava pieces with lime juice and honey until smooth. If using fresh guava, strain to remove seeds.
Reduce heat to medium-low and pour guava glaze over the hash. Toss gently to coat all vegetables evenly. Cook for 2-3 minutes until glaze thickens slightly and coats the vegetables.
Taste and adjust seasoning with additional salt, pepper, or lime juice as needed.
Remove from heat and garnish with fresh cilantro. Serve immediately while hot.
