Recipe Story
origins & traditionsThese Tamarind Ginger Tuna Skewers showcase the vibrant flavors of Caribbean coastal cooking. Fresh tuna is cut into generous chunks and marinated in a mixture of tamarind pulp, fresh ginger, garlic, and aromatic spices. The tamarind provides a distinctive sweet-tart flavor that complements the meaty texture of the tuna, while ginger adds warmth and depth. Grilled until lightly charred on the outside yet tender within, these skewers are perfect for casual gatherings or as an elegant starter. The marinade caramelizes slightly during grilling, creating a beautiful glaze that enhances both presentation and taste. Serve with a squeeze of fresh lime and enjoy the authentic taste of Caribbean island cuisine.
Instructions
step by stepExtract tamarind pulp from pods by soaking in 1/4 cup warm water for 10 minutes, then strain to remove seeds and fibers.
In a mixing bowl, combine tamarind pulp, grated ginger, minced garlic, lime juice, honey, soy sauce, cumin, paprika, cayenne pepper, and salt to create the marinade.
Cut tuna into 1.5-inch cubes and place in the marinade, ensuring all pieces are well coated. Cover and refrigerate for 15 minutes.
While tuna marinates, soak wooden skewers in water to prevent burning. Preheat grill or grill pan to medium-high heat and lightly oil the grates.
Thread marinated tuna cubes onto skewers, leaving small spaces between pieces.
Grill skewers for 2-3 minutes per side, turning carefully to achieve light char marks on all sides while keeping the center slightly pink.
Remove from heat and let rest for 2 minutes. Garnish with fresh cilantro and serve immediately with lime wedges.
