Add diced green bell peppers to the pan and cook for another 3-4 minutes, stirring occasionally until the peppers begin to soften.
Add diced tomatoes, salt, black pepper, and red pepper flakes. Stir well to combine. Cook for 5-6 minutes, stirring occasionally, until the tomatoes break down and release their juices, creating a thick sauce.
Reduce heat to medium-low. Crack the eggs directly into the pan over the vegetable mixture. Using a wooden spoon, gently stir the eggs into the vegetables, breaking the yolks and creating soft scrambled eggs mixed with the tomato-pepper base.
Continue cooking for 2-3 minutes, stirring gently, until the eggs are just set but still slightly creamy. Do not overcook.
Remove from heat immediately. Garnish with fresh parsley and crumbled feta cheese if desired. Serve hot directly from the pan with crusty bread.
