The batter is similar to traditional pancakes but slightly thicker, enriched with eggs and buttermilk for extra fluffiness. As they cook, they are carefully turned with a skewer or knitting needle to achieve an even golden-brown crust all around. Traditionally served during the Christmas season but enjoyed year-round, æbleskiver are perfect for weekend breakfasts or special gatherings. They can be filled with jam, apple pieces, or chocolate, and are typically served warm with a dusting of powdered sugar and a side of raspberry or strawberry jam for dipping.

step by stepIn a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cardamom until well combined.
In a separate bowl, separate the eggs. Beat the egg yolks with buttermilk, melted butter, and vanilla extract until smooth.
In another clean bowl, beat the egg whites with an electric mixer until stiff peaks form.
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; small lumps are fine.
Gently fold the beaten egg whites into the batter using a rubber spatula, being careful not to deflate them.
Heat an æbleskiver pan over medium heat and brush each cavity with melted butter.
Fill each cavity about two-thirds full with batter.
If using fillings, add a small spoonful of jam or a small piece of apple to the center of each.
Cook for 2-3 minutes until the bottom is golden brown and the edges start to look set.
Using a skewer, knitting needle, or fork, carefully turn each æbleskiver 90 degrees. The uncooked batter will flow into the pan.
Continue turning every 30 seconds until the æbleskiver are golden brown all over and cooked through, about 4-5 minutes total.
Remove from pan and keep warm while cooking remaining batches.
Dust with powdered sugar and serve immediately with jam on the side.

- 1/2 teaspoons salt

- 1/2 cups raspberry, jam for filling (optional)
- 1 pieces apple, peeled and finely diced (optional)
