step by stepIn a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cardamom until well combined.
In a separate bowl, whisk together buttermilk, eggs, melted butter, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; small lumps are fine.
In a clean bowl, beat egg whites until stiff peaks form.
Gently fold the egg whites into the batter in three additions, being careful not to deflate them.
Heat an æbleskiver pan over medium heat and add a small amount of butter to each cup.
Fill each cup about two-thirds full with batter.
Cook for 2-3 minutes until bubbles form and the bottom is golden brown.
Using a skewer or knitting needle, carefully turn each æbleskiver 90 degrees.
Continue turning each ball gradually until fully round and cooked through, about 4-5 minutes total.
Remove from pan and keep warm while cooking remaining batter.
Dust generously with powdered sugar and serve immediately with jam.
