step by stepIn a mixing bowl, whisk together flour, baking powder, salt, and a pinch of nutmeg until well combined.
In a separate bowl, beat eggs until light and fluffy, then add milk, melted butter, and vanilla extract, mixing thoroughly.
Gradually fold the wet ingredients into the dry ingredients until just combined, being careful not to overmix. Let batter rest for 10 minutes.
Meanwhile, prepare the berry compote by combining blueberries, raspberries, strawberries, honey, and lemon juice in a saucepan over medium heat. Simmer for 8-10 minutes until berries break down and mixture thickens slightly. Set aside to cool.
Heat the specialized pan over medium heat and brush each indentation with butter.
Fill each cup about three-quarters full with batter.
When bubbles begin to form on the surface and edges look set (about 2-3 minutes), use a skewer or fork to carefully turn each sphere 90 degrees.
Continue turning in quarter increments until fully golden brown on all sides and cooked through, about 6-8 minutes total.
Remove from pan and keep warm while cooking remaining batches.
Serve immediately with berry compote on the side and a light dusting of powdered topping.
