Recipe Story

origins & traditions

Brunsviger is a quintessential Danish treat that combines the soft texture of yeast-leavened cake with an irresistible caramelized brown sugar and butter topping. Originating from the island of Funen, this cake has been a staple in Danish bakeries and homes for generations. The dough is enriched with butter and milk, creating a tender crumb that perfectly complements the sweet, sticky topping. Unlike many cakes, Brunsviger is best served slightly warm, when the caramelized sugar topping is at its most luscious. The preparation involves two rises of the yeast dough, followed by a generous spreading of the brown sugar-butter mixture before baking. The result is a cake with incredible depth of flavor, featuring notes of caramel, butter, and a subtle tang from the yeast. Perfect for afternoon coffee breaks or as a special breakfast treat, Brunsviger embodies the Danish concept of hygge - cozy contentment shared with loved ones.

Instructions

  1. In a small saucepan, warm the milk until lukewarm (about 110°F). Remove from heat and stir in 1 tablespoon of sugar and the active dry yeast. Let stand for 5-10 minutes until foamy.

  2. In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture, beaten eggs, and 4 tablespoons of melted butter. Mix until a soft dough forms.

  3. Turn the dough out onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic. Place in a greased bowl, cover with a clean kitchen towel, and let rise in a warm place for 1 hour or until doubled in size.

  4. While the dough rises, prepare the topping: In a medium bowl, cream together the softened butter and brown sugar until well combined. Set aside.

  5. Once the dough has risen, punch it down and roll it out to fit a greased 9x13 inch baking pan. Press the dough evenly into the pan, making sure it reaches all corners.

  6. Using your fingers, make deep dimples all over the surface of the dough, spacing them about 1 inch apart. This creates pockets for the topping to settle into.

  7. Spread the brown sugar-butter mixture evenly over the entire surface of the dough, making sure to fill the dimples. Cover loosely with a kitchen towel and let rise for another 30 minutes.

  8. Preheat the oven to 375°F (190°C).

  9. Bake the Brunsviger for 30-35 minutes, until the topping is bubbling and caramelized and the edges are golden brown. The center should feel set when gently pressed.

  10. Remove from the oven and let cool in the pan for 10 minutes. The topping will be very hot and will continue to caramelize slightly as it cools.

  11. Cut into squares while still warm and serve. Brunsviger is best enjoyed the day it is made, preferably while still slightly warm.

Chef Tips

expert advice
For the best results, ensure all ingredients are at room temperature before beginning.
The dimples in the dough are crucial - they should be deep enough to hold pools of the caramelized topping.
If you prefer a less sweet version, you can reduce the brown sugar in the topping by 1/4 cup.
Some Danish bakers add a pinch of cinnamon to the topping for extra warmth.
The cake can be made with dark brown sugar for a more intense molasses flavor, or light brown sugar for a milder taste.
If the topping begins to brown too quickly during baking, tent the pan loosely with aluminum foil for the remaining baking time.
For an authentic Danish experience, serve with strong black coffee or tea.
You can also add a handful of chopped pecans or walnuts to the topping before baking for added texture and flavor.
