step by stepIn a large heavy-bottomed saucepan, combine the freshly grated coconut, brown sugar, and milk. Stir well to combine all ingredients evenly.
Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring constantly to prevent sticking and burning.
Add the cinnamon, ginger, vanilla extract, and a pinch of salt. Continue stirring frequently as the mixture cooks and thickens, about 30-35 minutes.
The mixture is ready when it pulls away from the sides of the pan and forms a thick, cohesive mass that holds its shape. Test by dropping a small amount onto a plate - it should firm up quickly.
Remove from heat and stir in the butter until fully incorporated and the mixture becomes glossy.
Pour the hot mixture onto a greased baking sheet or parchment-lined pan, spreading it evenly to about 1/2 inch thickness.
Allow to cool completely at room temperature for about 2 hours until firm enough to cut.
Once set, cut into small squares approximately 1 inch each. Wrap individually in wax paper if desired for storage.
