step by stepFinely dice the onion and mince the garlic cloves. Chop the fresh parsley and set aside.
Heat the butter in a large skillet over medium heat until melted and foaming.
Add the diced onions to the skillet and sauté for 3-4 minutes until softened and translucent.
Add the minced garlic and cook for another 30 seconds until fragrant.
In a bowl, crack the eggs and beat them lightly with a fork. Season with salt and black pepper.
Pour the beaten eggs into the skillet with the onions and garlic. Stir gently to create soft scrambled eggs, cooking for 2-3 minutes.
Once the eggs are just set but still slightly creamy, gradually add the cassava flour (farinha de mandioca) to the pan.
Stir constantly, toasting the flour with the eggs for 5-7 minutes until everything is well combined and the flour turns golden brown.
The mixture should be crumbly but moist, not dry. If too dry, add a small pat of butter.
Remove from heat and stir in the fresh chopped parsley.
Taste and adjust seasoning with additional salt and pepper if needed.
Serve immediately while hot and crispy.
