origins & traditions

Lagkage is Denmark's beloved celebration cake, featuring delicate vanilla sponge layers generously filled with vanilla-scented whipped cream, sweet strawberry jam, and fresh seasonal berries. This traditional Danish dessert is a staple at birthdays, confirmations, and festive occasions. The light and airy cake is topped with additional whipped cream, creating an impressive presentation that tastes as wonderful as it looks. The combination of soft cake, sweet-tart jam, and fresh cream creates a perfect balance of flavors and textures. While it may look elaborate, this cake is surprisingly straightforward to make with basic baking skills. The key is using quality ingredients and allowing proper cooling time between steps. Traditionally decorated with fresh strawberries and a dusting of powdered sugar, Lagkage represents the Danish love for simple yet elegant desserts that bring people together.

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

  2. In a large mixing bowl, beat eggs and sugar together with an electric mixer on high speed for 8-10 minutes until thick, pale, and tripled in volume.

  3. Sift flour into the egg mixture in three additions, gently folding with a rubber spatula after each addition to maintain airiness.

  4. Add vanilla extract and fold gently until just combined.

  5. Divide batter evenly between prepared pans and smooth the tops.

  6. Bake for 25-30 minutes until golden and a toothpick inserted in the center comes out clean.

  7. Cool cakes in pans for 5 minutes, then turn out onto cooling racks to cool completely.

  8. Once completely cool, slice each cake horizontally to create 4 thin layers.

  9. In a chilled bowl, whip heavy cream with powdered sugar and vanilla extract until stiff peaks form.

  10. Place first cake layer on a serving plate. Spread a thin layer of strawberry jam, then top with whipped cream and sliced strawberries.

  11. Repeat with remaining layers, ending with whipped cream on top.

  12. Decorate the top and sides with remaining whipped cream using a spatula or piping bag.

  13. Garnish with fresh whole strawberries and dust lightly with powdered sugar.

  14. Refrigerate for at least 2 hours before serving to allow flavors to meld.

Chef Tips

expert advice
For the lightest sponge cake, make sure eggs are at room temperature and beat them long enough to achieve maximum volume.
When folding in flour, use a gentle hand to avoid deflating the batter.
You can substitute raspberry or apricot jam for strawberry.
For a more traditional Danish presentation, use a serrated knife to create a decorative pattern on the sides with the whipped cream.
This cake is best assembled on the day of serving but the sponge layers can be baked a day ahead and wrapped tightly.
For extra flavor, brush each layer with a simple sugar syrup before adding fillings.
In winter months when fresh strawberries are less available, use frozen berries that have been thawed and drained, or substitute with other seasonal fruits like raspberries or blueberries.
