Avoiding high-histamine foods
The low histamine diet involves the avoidance of foods that are high in histamine or that trigger the release of histamine in the body. Individuals following this diet typically eliminate aged, fermented, or preserved foods such as aged cheeses, cured meats, alcohol, fermented vegetables, vinegar-containing products, and certain fish like tuna and mackerel. They also avoid leftovers, processed foods, and some fruits and vegetables known to increase histamine levels or interfere with histamine breakdown. The diet is often used to manage symptoms related to histamine intolerance or sensitivity, which can include headaches, hives, digestive upset, or nasal congestion.
